About the Recipe
Colombian Chicken and Rice, known as Arroz con Pollo, is a flavorful one-pot dish featuring tender chicken, vibrant vegetables, and aromatic rice cooked in a savory broth.
Ingredients
4 chicken thighs (about 800 grams)
300 grams rice
1 onion finely chopped.
2 cloves garlic, minced.
1 red bell pepper, diced.
1 green bell pepper, diced.
1 carrot, diced.
1 cup frozen peas
2 tomatoes, diced.
3 cups chicken broth
2 tablespoons vegetable oil
1 teaspoon ground cumin
1 teaspoon paprika
Salt and pepper to taste
Fresh cilantro for garnish (optional)
Preparation
Step 1) make the Chicken.
Heat vegetable oil in a large pot or pan over medium-high heat.
Season the chicken with salt, pepper, ground cumin, and paprika.
Brown the chicken pieces on all sides until golden brown. Remove and set aside.
Step 2) Sauté Vegetables
In the same pot, add a bit more oil if needed. Sauté the chopped onion and minced garlic until soft.
Add the diced bell peppers, carrots, and tomatoes. Cook for a few minutes until the vegetables soften.
Step 3) Combine Chicken and Vegetables
Return the browned chicken pieces to the pot with the sautéed vegetables.
Step 4) Add Rice and chicken Broth.
Wash the rice and when done, pour in the rice and chicken broth. Stir gently to combine.
Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes or until the rice is cooked and the chicken is tender.
Step 5) Add Peas
Add the frozen peas to the pot during the last 5 minutes of cooking
Step 6) prep to serve.
Once done, fluff the rice with a fork and ensure the chicken is fully cooked through.
Garnish with fresh cilantro if desired before serving this delightful Colombian Chicken and Rice.
